Bobó de Camarão is a traditional Brazilian dish made with shrimp (camarão) cooked in a creamy sauce made from cassava (also called yuca or manioc), coconut milk, and palm oil (called dendê oil in Brazil). It has a rich, tropical flavor and is popular in the northeastern region of Brazil, especially in Bahia, which is known for its Afro-Brazilian cuisine.
The texture is creamy, the flavor is slightly sweet and spicy, and the dish is very comforting and delicious!
500g of shrimp (peeled and cleaned)
500g of cassava/yuca (peeled and chopped)
1 onion (chopped)
2 garlic cloves (minced)
1 red paprika (chopped)
1 tomato (chopped)
200ml (about 1 cup) of coconut milk
2 tablespoons of palm oil (dendê oil)
2 tablespoons of olive oil
Salt and black pepper to taste
Chopped cilantro or parsley for garnish
1 small chili pepper (optional, for a little heat)
Cook the cassava: In a pot, add the cassava with enough water to cover it. Boil until soft (about 20–30 minutes). Then blend it with a little of the cooking water to make a thick puree. Set aside.
Season and cook the shrimp: Season the shrimp with salt and pepper. In a large pan, heat 1 tablespoon of olive oil. Cook the shrimp for 2–3 minutes on each side, until just pink. Remove from the pan and set aside.
Make the flavor base: In the same pan, add 1 tablespoon of olive oil. Sauté the onion, garlic, bell pepper, tomato, and chili (if using) until soft.
Add the cassava puree: Pour the cassava puree into the pan and mix well. Add the coconut milk and palm oil. Stir everything together and let it cook for 5–10 minutes, until the flavors combine and the texture is creamy.
Add the shrimp back: Put the cooked shrimp back into the pot. Mix gently and cook for 2–3 more minutes, just to warm it all up.
Final touch: Taste and adjust the salt if needed. Sprinkle with chopped cilantro or parsley before serving.
1. Don’t overcook the shrimp or they will become rubbery.
2. If the mixture is too thick, add a bit of water or more coconut milk.
