Easy Yellow Cornmeal Arepas

Ingredients
- 2 cups Harina de Maíz Amarillo Precocida
- 1 cup warm water
- 1 teaspoon salt
- 1 cup shredded cheese (like mozzarella or queso blanco)
- 2 tablespoons vegetable oil
Directions
- In a large mixing bowl, combine 2 cups of Harina de Maíz Amarillo Precocida and 1 teaspoon of salt.
- Gradually add 1 cup of warm water to the dry ingredients while mixing with your hands or a spoon until a dough forms. The dough should be soft but not sticky; add more water or flour as needed to achieve the right consistency.
- Divide the dough into 8 equal pieces and roll each piece into a ball. Flatten each ball into a disc about 1/2 inch thick, ensuring they are even in thickness for uniform cooking.
- Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Once the oil is hot, carefully add 4 arepas to the skillet, cooking until golden brown on the bottom, about 4-5 minutes. Flip and cook the other side for another 4-5 minutes.
- Remove the arepas from the skillet and place them on a paper towel to drain any excess oil. Repeat with the remaining arepas.
- While the arepas are still warm, slice them open and fill with shredded cheese or your favorite fillings like avocado, beans, or cooked meats. Serve warm.
