Ingredients
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 medium carrot, grated
- 1 medium bell pepper, diced
- 1 cup frozen peas
- 2 cups farofa (toasted manioc flour)
- 1/2 teaspoon smoked paprika
- 1/4 cup fresh parsley, chopped
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- Heat the olive oil in a large skillet over medium heat until shimmering, about 1 minute.
- Add the diced onion and sauté until translucent, about 3-4 minutes, stirring occasionally.
- Stir in the minced garlic and cook until fragrant, about 30 seconds.
- Add the grated carrot and diced bell pepper to the skillet, cooking for another 3-4 minutes until the vegetables are tender but still vibrant in color.
- Mix in the frozen peas and cook for an additional 2 minutes, allowing them to thaw and warm up.
- Sprinkle the farofa over the vegetable mixture, then add the smoked paprika, salt, and black pepper. Stir well to combine all the ingredients, cooking for about 3-4 minutes until the farofa is heated through and slightly golden brown.
- Remove the skillet from heat and stir in the chopped parsley before serving.
