Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 medium carrot, grated
  • 1 medium bell pepper, diced
  • 1 cup frozen peas
  • 2 cups farofa (toasted manioc flour)
  • 1/2 teaspoon smoked paprika
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Heat the olive oil in a large skillet over medium heat until shimmering, about 1 minute.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes, stirring occasionally.
  3. Stir in the minced garlic and cook until fragrant, about 30 seconds.
  4. Add the grated carrot and diced bell pepper to the skillet, cooking for another 3-4 minutes until the vegetables are tender but still vibrant in color.
  5. Mix in the frozen peas and cook for an additional 2 minutes, allowing them to thaw and warm up.
  6. Sprinkle the farofa over the vegetable mixture, then add the smoked paprika, salt, and black pepper. Stir well to combine all the ingredients, cooking for about 3-4 minutes until the farofa is heated through and slightly golden brown.
  7. Remove the skillet from heat and stir in the chopped parsley before serving.
