1 cup agua de coco, chilled

1 cup fresh strawberries, hulled and halved

1 cup fresh blackberries

1 cup fresh raspberries

2 tbsp honey, or agave syrup, adjust to taste

1/2 cup iced coconut milk, optional for creaminess

1/4 cup fresh mint leaves, for garnish
Directions
In a blender, combine the chilled agua de coco, halved strawberries, blackberries, raspberries, honey, and lime juice.
Blend on high until completely smooth, about 1-2 minutes. If you prefer a thinner consistency, add a little more agua de coco until desired texture is reached.
For a creamier drink, add iced coconut milk to the blender and pulse briefly to combine, ensuring the mixture is smooth and well blended.
Taste the mixture and adjust sweetness by adding more honey or agave if desired, blending briefly to combine.
Strain the mixture through a fine-mesh sieve into a large pitcher to remove seeds and pulp, if a smoother drink is preferred. Use a spatula to help push the liquid through the sieve.
Serve the Tropical Berry Coconut Cooler over ice in tall glasses. Garnish with fresh mint leaves and additional berries for a pop of color.
