1 cup flocão de milho

1/2 cup milk, room temperature

2 large eggs, lightly beaten

1/4 cup unsalted butter, melted, plus more for frying

1/2 tsp cinnamon, for dusting

1/4 cup honey
Directions
In a large mixing bowl, combine the flocão de milho, all-purpose flour, sugar, baking powder, and salt. Stir until well mixed.
In another bowl, whisk together the milk, beaten eggs, melted butter, and vanilla extract until combined.
Pour the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
Heat a large skillet over medium heat and add a tablespoon of butter, allowing it to melt and coat the pan evenly.
Using a 1/4 cup measuring cup, scoop the batter onto the skillet, making sure to leave space between each fritter. Cook for 2-3 minutes, or until the edges begin to bubble and the bottom is golden brown.
Flip the fritters carefully and cook for another 2-3 minutes on the other side until golden and cooked through. Check for doneness by inserting a toothpick in the center—if it comes out clean, they are ready!
Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess butter. Repeat the process with the remaining batter, adding more butter to the skillet as needed.
To serve, stack the fritters on a plate, drizzle with honey, and sprinkle lightly with cinnamon. Enjoy warm!
