Ingredients
- 1 cup flocão de milho
- 1/2 cup all-purpose flour
- 2 tbsp sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup milk, room temperature
- 2 large eggs, lightly beaten
- 1/4 cup unsalted butter, melted, plus more for frying
- 1 tsp vanilla extract
- 1/2 tsp cinnamon, for dusting
- 1/4 cup honey
Directions
- In a large mixing bowl, combine the flocão de milho, all-purpose flour, sugar, baking powder, and salt. Stir until well mixed.
- In another bowl, whisk together the milk, beaten eggs, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.
- Heat a large skillet over medium heat and add a tablespoon of butter, allowing it to melt and coat the pan evenly.
- Using a 1/4 cup measuring cup, scoop the batter onto the skillet, making sure to leave space between each fritter. Cook for 2-3 minutes, or until the edges begin to bubble and the bottom is golden brown.
- Flip the fritters carefully and cook for another 2-3 minutes on the other side until golden and cooked through. Check for doneness by inserting a toothpick in the center—if it comes out clean, they are ready!
- Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb any excess butter. Repeat the process with the remaining batter, adding more butter to the skillet as needed.
- To serve, stack the fritters on a plate, drizzle with honey, and sprinkle lightly with cinnamon. Enjoy warm!
