Feijoada - Brazilian Black Beans Stew
Feijoada is a traditional Brazilian dish known for its rich combination of black beans, smoked meats, and side dishes. It’s a true feast for the taste buds. Here's how to prepare this delicacy:
Ingredients
- 500g Black Beans
- 300g Pork (ribs, loin, among others)
- 200g Air-dried beef
- 100g Calabresa sausage
- 200g bacon
- 2 large onions, chopped
- 4 cloves of garlic, minced
- Salt to taste
- Black pepper to taste
- Chilli sauce to taste
- Rice
- Farofa
Directions
- Wash the black beans thoroughly and soak them in cold water for at least 2 hours.
- In a pressure cooker, cook the black beans with enough water to cover them for about 40 minutes or until they become tender.
- In another pan, fry the bacon until crispy and set it aside.
- In the same pan, sauté the onions and garlic until golden.
- Add the pork, sausage and beef to the pan and fry until browned.
- Remove excess fat from the pan and add the cooked beans.
- Season with salt and and pepper to taste.
- Let the feijoada cook on low heat for another 30 minutes, stirring occasionally to prevent it from sticking to the bottom of the pan.
- Serve the feijoada with white rice, sautéed collard greens, sliced oranges, and farofa (toasted manioc flour with seasonings).
