Easy Yellow Cornmeal Arepas

Ingredients

  • 2 cups Harina de Maíz Amarillo Precocida
  • 1 cup warm water
  • 1 teaspoon salt
  • 1 cup shredded cheese (like mozzarella or queso blanco)
  • 2 tablespoons vegetable oil

Directions

  1. In a large mixing bowl, combine 2 cups of Harina de Maíz Amarillo Precocida and 1 teaspoon of salt.
  2. Gradually add 1 cup of warm water to the dry ingredients while mixing with your hands or a spoon until a dough forms. The dough should be soft but not sticky; add more water or flour as needed to achieve the right consistency.
  3. Divide the dough into 8 equal pieces and roll each piece into a ball. Flatten each ball into a disc about 1/2 inch thick, ensuring they are even in thickness for uniform cooking.
  4. Heat 2 tablespoons of vegetable oil in a skillet over medium heat. Once the oil is hot, carefully add 4 arepas to the skillet, cooking until golden brown on the bottom, about 4-5 minutes. Flip and cook the other side for another 4-5 minutes.
  5. Remove the arepas from the skillet and place them on a paper towel to drain any excess oil. Repeat with the remaining arepas.
  6. While the arepas are still warm, slice them open and fill with shredded cheese or your favorite fillings like avocado, beans, or cooked meats. Serve warm.
