Ingredients
- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 ounces cream cheese, softened
- 1/2 cup sour cream, room temperature
- 1/2 cup powdered sugar
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/2 cup guava puree, strained if using fresh guava
- 1/4 cup guava nectar
- 1 tablespoon fresh lime juice
- 1/4 cup fresh guava slices, for garnish
Directions
- Preheat your oven to 325°F (160°C).
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated and resemble wet sand.
- Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then remove from the oven and let it cool while preparing the filling.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.
- Add the sour cream and powdered sugar to the cream cheese, mixing until fully incorporated and smooth, about 1-2 minutes more.
- Add the eggs, one at a time, mixing on low speed just until combined after each addition. Avoid overmixing to keep the cheesecake light and fluffy.
- Stir in the vanilla extract, guava puree, guava nectar, and fresh lime juice until the mixture is uniform in color and texture, about 1 minute.
- Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.
- Bake the cheesecake in the preheated oven for 50-60 minutes, or until the edges are set but the center still has a slight jiggle. Turn off the oven and crack the door, allowing the cheesecake to cool in the oven for 1 hour to prevent cracking.
- Remove the cheesecake from the oven and refrigerate for at least 4 hours, or overnight, to set completely before serving.
