Yerba mate is used to make mate tea. When served cold, the drink is called tereré. Mate tea is traditionally consumed in South America, but is also popular in Syria and Lebanon.

Yerba mate translates as mate herb, with the word mate originally coming from the word mati, a complex word with multiple meanings from the Quechua language. Mati means, among other things, "container for a drink," "infusion of a herb," and "calabash." The infusion is drunk from a container (typically a calabash) that is filled up to three-quarters with dry leaves (and stems) of the mate plant. The leaves are infused with water at a temperature of 70-80°C.
The calabash is also called a guampa, porongo, or cuia, depending on the country. It is drunk through a special metal straw (bombilla in Spanish, bomba in Portuguese). The calabash is passed from one person to another (usually in a circle) and refilled.
