Chimichurri is a spicy sauce used both as an ingredient in cooking and as a table condiment for grilled meats. It is a specialty of Argentine cuisine and consists, among other things, of finely chopped parsley, garlic, paprika, olive oil, oregano and vinegar.

The word chimichurri means "a mix of everything" in Basque Spanish. In Argentina it is a staple: it is passed around in a large bowl at asados (barbecues), creating a communal experience (the same goes for mate, which comes with one Chimichurri also goes well with saltine crackers, on fried eggs with fresh tomatoes and avocados, with potatoes, on grilled vegetables with tofu or with fish fillets.
