Alfajores are tender cookie sandwiches filled with creamy dulce de leche (milk caramel cream).
The alfajor is of Arabic origin and its history can be traced back to the 8th century. The name comes from the Moorish Spanish "Al-Hasu" (filling). During the colonial period, the biscuit was brought to South America via Spain. Nowadays alfajores are available in many sizes and flavours. Each region of South America has its own varieties and many bakeries have specialised in the production of alfajores.
The Havanna factory was founded in Buenos Aires, Argentina in 1948 and produces over 100 million alfajores every year.
